How it started
A looooong long long time ago, G.Y.S.T project appeared as an answer to the questions: "What can we do to attract the most talented people in the hospitality industry in a new project, what do they need?" The conclusion was pretty simple - they need to have the option to work outside the country and discover how things are done in a more gastronomically developed country.
This is how the idea for a collaboration between the local and Copenhagen hospitality scene. Open in spring 2023, G.Y.S.T. is all about creating a bridge between the raw-creativity of Bucharest and the Danish ingenuity when it comes to technicality.

TO G.Y.S.T. OR NOT TO G.Y.S.T.
Bistro and in-house bakery - just nice food. At G.Y.S.T. we are all about amazing things done simple, and we make almost everything in-house: from our flaky croissants and pain au chocolat, to our pork sandwich to our celery Schnitzel (yes it's vegan, yes it's good). Our goal is to rehype the old town (locals know what we are talking about) and become a meetup point for locals creativity and Danish ingenuity.
Our friends from Copenhagen-based micro-roastery Coffee Collective and Danish micro-brewery To Øl, offer the best coffee and beer experience, while we focus on everything else.
BLĂNARI STREET
G.Y.S.T. is all about good things done simple, and for that we decided to have an inhouse bakery. So, our croissants, pain au chocolad, coockies, but even the burger buns and sandwich bread is made here.
Flaky, hot looking and glossy - our pastry is guilt-free, as we only use the best ingredients. Just have a bite, or two or three - or dammit finish the whole thing!
